Bidfood explores how innovation can help foodservice operators stay at the forefront of changing consumer demands #

As the industry adapts to rising consumer expectations and ongoing operational pressures, Bidfood has revealed how foodservice operators can easily embrace innovation across menus, products and operations to meet changing consumer demands.

With 58% of consumers placing importance on innovation in food and venues, and 54% saying they explore new or unique cuisines and dishes, innovation is no longer a niche expectation. Research also shows that 50% of operators are prioritising new products, highlighting the need to balance fresh ideas and creativity with commercial, operational and consumer appeal.

However, operators also face the challenge of making innovation feel accessible. Consumers are most encouraged by new flavours and ingredients, but barriers around taste and price mean that innovation needs to be easy to understand, appealing and deliverable.

During its latest event, Innovation in Motion, Bidfood demonstrated how innovation is taking shape through nutrition-led menu development, hospitality-ready solutions, experiential desserts and emerging, forward-thinking SME brands. It delved into the innovation process, with talks and activities from Bidfood’s Insights, Nutrition, Marketing, and Chef Development teams.

In preparation for the Government's new Healthy Food Standard, the event explored the definition of healthier food and drink products in the UK, as well as what mandatory reporting could look like for large food businesses. The Nutrition Team also showcased practical ways chefs can incorporate more nutrient-dense whole foods, including beans, into their menus.

There was also a spotlight on Simply Food Solutions’ new hospitality range, Discovery Kitchen. Designed by Bidfood’s Culinary Director, Martin Eshelby, the range is inspired by Bidfood’s 2026 Food and Drink Trends, as well as Martin’s travels across Europe and visits to UK restaurants. Developed in collaboration with Natural Innovations, Bold Bean Co, and Tofoo & Co, Discovery Kitchen supports low-skilled, time-pressured chefs. The range features its new ‘Black Bean Birria’ and creamy ‘Malaysian Coconut Chicken Curry’, which can be reinvented in multiple ways, helping operators create versatile menus with minimal effort.

And, with 62% of consumers being very experience-led[4], guests sat through an immersive dessert experience, showcasing how simple desserts can be elevated through additional textures, theatre, and consumer participation. Dishes included a ‘Coconut Lime and Sticky Rice’ served in a treasure box, a ‘Banana Bread Tiramisu’ and ‘Basque Cheesecake’ with a cherry-infused smoke.

The day also featured the latest suppliers within The Open Doors Programme, championing future-facing products, rooted in social value and healthcare catering:

Half the Story – a social enterprise supporting the homeless and those with major barriers to employment by providing jobs within their bakery and creating delicious, life-changing biscuits.

icesupp – the world’s first nutritional food supplement, designed to be frozen, but can also be used as a coulis to help fortify both sweet and savoury dishes. Plant-based and allergen-free, one serving delivers 5g of protein, 5.5 g of fibre and a blend of vitamins and minerals.

Sodexo supports major youth employment drive with pledge to recruit 100 foundation-level apprentices #

To mark Youth Employment Week 2026 Sodexo UK & Ireland has announced its pledge to recruit 100 foundation-level apprentices to help, primarily 16–21-year-olds kick start their careers in catering and hospitality services as part of the government’s Youth Guarantee scheme created to ensure every young person is either earning or learning.   

Sodexo is one of the first organisations in its sector to pledge its support to the scheme committing to creating paid, supported entry-level opportunities for young people to gain real workplace experience while completing structured training in employability, workplace behaviours, customer service, food safety, hospitality and role-specific technical skills 

The eight-month programme will see suitable existing vacancies converted into supported early careers opportunities, providing apprentices with a first step onto the employment ladder and a route into further roles, apprenticeships, Sodexo academies or the wider industry. The foundation apprenticeship will be funded through the apprenticeship levy and delivered through a combination of work-based learning, coaching and learning activities supported by a training provider. 

Pete Siddle, director of talent and learning, Sodexo UK & Ireland said: “Too many young people struggle to access that crucial first step into work because pathways into employment can feel unclear, inconsistent or out of reach. Through this pledge, we want to give more young people the support, experience and confidence to take that step, whether they go on to build their career with Sodexo or elsewhere in the catering and hospitality sector. Our aim is for every learner to finish with stronger workplace readiness, recognised skills and a clearer understanding of where their next career step could take them." 

The pledge forms part of Sodexo’s wider early careers and social mobility strategy, focused on helping young people better understand the world of work and access structured development pathways. 

Sodexo will work with partners including HIT Training, Youth Employment UK, Unifrog, Springboard and Movement to Work to connect young people with opportunities, support delivery and better understand the barriers they face when entering employment. 

Through its partnership with Unifrog, the online careers platform used by schools across the UK, Sodexo is already helping young people explore future career opportunities through virtual work experience, career insight sessions and employer engagement activities. On 29 June, Sodexo became the first host organisation for Unifrog's 2026 Virtual Work Experience Week, providing more than 2,5000 students with an introduction to the company and the varied career pathways it can offer. 

Initiatives such as this help provide students greater exposure to the world of work and helping them build the confidence, skills and understanding needed to take their next steps into employment.

Sodexo unveils its Barista Collective – putting craft and careers at the heart of its training #

Empowering baristas with knowledge, skills, and confidence to elevate the guest experience through every cup served is the focus of Sodexo UK & Ireland’s Barista Collective training programme. 

The Barista Collective programme has been designed to elevate coffee as more than just a hot drink, but an experience that brings people together, placing quality, craft and connection at its core. 

The programme brings together more than 20 coffee champions from across Sodexo’s business to create a culture of craft, collaboration and community focused on delivering exceptional coffee experiences. Each has completed an intensive Train the Trainer programme, equipping them to deliver new Level 1 and Level 2 barista training courses across the organisation. 

Level 1 provides a strong foundation for both new and existing baristas, focusing on essential skills and operational excellence. Level 2 builds on this knowledge, offering a deeper exploration of coffee as a product and craft, including bean selection, processing methods, roasting, sensory development and advanced brewing techniques.

One of the UK’s leading wholesalers - Creed Foodservice - has officially opened entries for its annual Care Chef of the Year competition, inviting chefs from across the UK care sector to showcase the talent, innovation and compassion that define professional care catering.
 
Now in its fourth year and firmly established as a highlight of the care catering calendar, the competition reflects Creed's long-standing commitment to the sector, where it has supported care providers for many years with specialist expertise, menu development and tailored foodservice solutions.
 
With more than 370,000 people living in care homes in England, mealtimes play a vital role in residents' health, wellbeing and quality of life. Beyond providing nutritious meals, care chefs create dining experiences that bring comfort, evoke memories and encourage social interaction. Creed’s Care Chef of the Year competition recognises the professionals whose skill and creativity make that possible every day.
 
This year's challenge invites chefs to create a two-course dining experience centred around the theme of ‘Movie Classics: Bringing iconic films to life through dining’. Lee Kum Kee and Andrew Wong put light and dark soy sauce under the spotlight #

Two-Michelin-starred chef challenges professional kitchens as new research1 reveals 85% of people cannot tell the difference between light and dark soy sauce - "If 85% of people can't tell light and dark soy sauce apart, chances are plenty of professional kitchens can't either!"

That is the challenge from Andrew Wong, chef patron of two-Michelin-starred A. Wong in London and the only Chinese restaurant outside Asia to hold two Michelin stars, as he supports a new Lee Kum Kee campaign putting soy sauce under the spotlight for anyone with a serious interest in authentic Chinese flavours and cuisine.

The confusion matters, Lee Kum Kee argues, because soy sauce is not just a seasoning but a flavour system, one that delivers umami, aroma, depth and colour when light and dark are working in harmony.  No single bottle does it all, and a kitchen using only one is cooking with half the system.

Andrew Wong's challenge is backed by new research conducted by Lee Kum Kee in July 2026 among 903 respondents, which found that 85% could not correctly identify the difference between light and dark soy sauce.  A third (33%) believed light soy sauce is less salty than dark, when in fact light soy sauce is the savoury one of the two, 10% thought dark soy sauce is simply a sweeter version, and 42% admitted they did not know the difference at all.

The knowledge gap comes at a time of significant category growth.  Market analysis by Mordor Intelligence2 values the global soy sauce market at USD 59.13 billion in 2025, forecast to grow at a CAGR of 4.78% to reach USD 78.25 billion by 2031, driven in part by rising consumer preference for umami-rich flavours and the growing popularity of Chinese and wider Asian cuisines.  In the UK, demand continues to climb as Asian cuisine gains wider adoption and chefs prioritise deeper umami profiles, making the gap between familiarity and understanding a real opportunity for professional kitchens.

At the heart of the campaign is a simple principle from Chinese culinary tradition: light and dark soy sauces are not two versions of the same product, but two complementary forces.  Light soy brings the flavour, the umami, the savoury depth, and the aroma that hits the moment it touches the heat. Dark soy brings the glaze, the richness, the lustre that coats every ingredient.  Used together, dishes achieve a balance of taste and appearance that neither can deliver alone.

The distinction begins at production.  Lee Kum Kee's soy sauces are made from non-GMO soybeans and naturally fermented for three to six months under natural sunlight.  That slow exposure to the sun's daily rhythm builds the aromatic complexity and rounded umami that define a properly brewed soy.  Both light and dark soy sauces start from the same naturally fermented base, but dark soy sauce is enriched with caramel, giving it a thicker body, deeper colour and more mellow profile. The sauces are produced in eco-conscious, LEED-certified facilities; proof that a company whose heritage dates back to 1888 can also meet modern environmental standards.

Andrew Wong said: "Fermentation is one of the oldest ways of transforming flavour, and soy sauce is one of its greatest achievements.  When brewed correctly in natural sunlight, soy sauce develops layers of umami and aroma that no other seasoning at the pass can replicate.  That's why the quality of your soy sauce is essential.  In my kitchen, I use Lee Kum Kee's range, including their Premium Light and Premium Dark Soy Sauce.  Their heritage in traditional brewing shows in every bottle."

Sodexo secures a major food services contract with Meta #

Sodexo today announced that it has been selected by Meta to deliver food services across its global portfolio.
 
The enterprise partnership covers more than 130 locations in over 30 countries across all regions, including a highly diverse range of environments, such as corporate offices, large campuses, data centres, conference hubs and smaller office locations. Service delivery will start progressively in the coming months.
 
This represents one of the largest single global workplace food services contracts secured by Sodexo to date. It was awarded following a highly competitive global tender process, during which Sodexo demonstrated strong team capabilities and a true partnership approach. Compass wins Youth Employment UK ‘Employment Excellence Award’ #

Compass Group UK & Ireland has been recognised as one of the UK’s leading employers for young people after winning the Youth Employment UK ‘Employment Excellence Award’ – announced during Youth Employment Week (6-10th July 2026).

FEA starts to unveil the energising lineup for the 2026 edition

FEA’s 2026 industry conference is looking to shake up the foodservice equipment sector with a variety of new ideas and concepts from an energising speaker lineup. The conference programme is split, with the morning session focusing on economic and business insight, while the afternoon looks at training and development – with an eye on the rousing success of FEA’s NextGen initiative, which is looking to attract young people to the industry and support them once they are here.

What does the future hold for hospitality? Vicky Pryce, chief economic adviser at the Centre for Economics and Business Research, will give an economic update and projections, while Mike Jones, editor of Foodservice Consultant, will look at foodservice trends around the world. Then conference will hear from the Zero Carbon Forum about ‘operators of the future.’

The conference’s powerhouse session has a presentation from Henry Francis, senior strategy and projects manager of Deliveroo. That’s followed by one of the keynote speakers, Mika Halttunen, chairman of Halton, who’ll end the morning with a bang with his talk, "Building a winning culture, globally."

Attracting young professionals is key to the industry’s future. Following an update on NextGen’s progress, DWP’s John Spraggett of the Strategic Relationship Team will take a look at government initiatives, such as the youth guarantee, and consider strategies for moving forward. More youth-focused presentations will include a panel session looking at training, and considering whether we’re doing it right, asking, for example, are we supporting operators?

Sodexo & the Purpose Coalition unite in Parliament, launching social mobility report #

The power of partnership to drive social mobility and create opportunity was at the centre of The Purpose Coalition’s summer reception in the House of Commons yesterday which was delivered in collaboration with Sodexo UK & Ireland. 
 
Leaders from across multiple sectors, ranging from professional services to health and government, to education, gathered to reaffirm their shared commitment to creating opportunity, strengthening communities and improving social mobility across the UK. 

The summer reception also marked the launch of Sodexo’s latest social mobility impact report, Supporting People, Strengthening Places, produced in partnership with The Purpose Coalition. 

The report highlights how the organisation is embedding opportunity into every part of its business through investment in people, places, planet and partnerships, demonstrating that commercial success and positive social impact go hand in hand.

Among the report's highlights are:

4,000 young people engaged through work experience opportunities, showcasing a range of roles and career paths available to them.

35% increase in apprenticeship starts, with more than 700 apprentices currently developing skills across the business, apprenticeship levy utilisation increasing from 53% to 97%, and a commitment to create 100 Foundation Apprenticeships for young people. 

Almost £3 million in Apprenticeship Levy funding transferred to SMEs, charities and purpose led organisations, strengthening local skills pipelines, supporting fair chance employment and widening opportunity across local economies. 

More than 800 employment opportunities created through Sodexo’s Starting Fresh campaign, helping people with convictions access sustainable employment while encouraging employers across the UK to embrace fair chance recruitment. With an additional 300 created within Sodexo since the campaign was launched three years ago.

Almost 11 million people supported through the Stop Hunger Foundation, working alongside more than 470 charity partners to tackle food insecurity and its root causes through funding, volunteering and long-term community partnerships. 

National recognition for responsible business leadership, including being named Employer of the Year at the 2026 British Business Awards, a Top 100 Apprenticeship Employer, listed in the Times Top 50 Employers for Gender Equality, one of the UK's Top 75 Employers for Social Mobility, and being the first business in the UK to achieve the highest Ambassador Charter Mark from the Social Recruitment Advocacy Group for its leadership in inclusive employment.

The event comes at a critical moment for the UK's opportunity agenda. With an estimated 1,012,000 young people aged 16 to 24 currently not in education, employment or training (NEET), speakers highlighted the importance of employers, educators, policymakers and communities working together to create clearer pathways into skills, employment and long-term opportunity.
 
Guests also heard from The Rt Hon Baroness Smith of Malvern, Minister for Skills and Minister for Women and Equalities, who reinforced the importance of partnership between government and employers in widening access to opportunity. She said:
“Every person in this country should have access to fantastic opportunities, no matter where they live.

“The Purpose Coalition's fantastic work will unite employers, educators and communities together to deliver on that goal.

“To ensure every young person has the chance to get on in life, we have committed £2.5 billion to help almost one million young people into education, training and work.”

Bestway Group partners with global automotive leader Geely Auto Group to drive Pakistan expansion #

Bestway Group has announced a landmark strategic partnership with Geely Auto Group, one of China's largest privately-owned automotive manufacturers, marking a significant expansion of the Group's international investment portfolio.

Under the agreement, Bestway Automotive (Private) Limited, a subsidiary of Bestway Group, has been appointed the exclusive authorised distributor of Geely Auto Group products in Pakistan.

The partnership will see a range of Geely passenger vehicles introduced into the Pakistani market, initially through imported Completely Built Units (CBUs), before transitioning to local vehicle assembly at Bestway's automotive manufacturing facility in Karachi.
Supporting this investment, Bestway Automotive recently acquired Al-Haj Automotive's vehicle assembly plant at Port Qasim, Karachi.

The facility spans 24.71 acres and includes more than 403,000 sq. ft. of covered manufacturing space, together with installed plant and machinery capable of assembling up to 25,000 vehicles per year. This investment provides the manufacturing platform to support Geely's long-term growth and localisation strategy in Pakistan.

The agreement is expected to establish a long-term strategic collaboration focused on:

•           Expanding consumer access to world-class automotive technology
•           Supporting local manufacturing and localisation
•           Strengthening Pakistan's automotive supply chain
•           Creating skilled employment opportunities
•           Driving long-term investment into the country's automotive sector

The partnership was formally signed at Geely Auto Group's headquarters in Hangzhou, China, bringing together senior leaders from both organisations to mark the beginning of the collaboration.

Geely Auto Group is recognised globally for its engineering excellence, advanced vehicle technologies and extensive automotive portfolio, which includes brands such as Volvo Cars, Polestar, Lotus, Zeekr, Lynk & Co and Smart.
